Dijon University Hospital: guardian of Burgundy's biodiversity and viticulture

" The CHU's CSR action plan is based on four main areas: reducing the environmental impact of infrastructures, limiting the structural footprint, promoting rational consumption and supporting social actions for individual and environmental well-being ," explains Florian Cavelier, General Secretary of the Centre Hospitalier Universitaire de Dijon.

When it comes to biodiversity, Dijon University Hospital has plenty to offer. It manages a colossal heritage of 6,575 hectares of farmland and 23 hectares of vineyards in Burgundy, recently converted to organic farming. These lands are entrusted to renowned houses such as Louis Bouillot and the Château de Marsannayproduce prestigious cuvées, including Puligny-Montrachet, a terroir emblematic of Burgundy's great whites.

The farmland is leased, and the 1,500 hectares of forest are managed by the Office National des Forêts (ONF), with programs for restocking and preserving wetlands and protected species. " Here, for example, we have suspended a logging program, simply because there is a stork nesting on part of this forest ".

But for Florian Cavelier, the jewel in the crown is the 23 hectares of vines he manages: " Having 23 and a half hectares of vines in Burgundy is quite something, when you consider that the average size of a Burgundy estate is 8 hectares. The estate is leased, but we have our own labels and our own cuvées, including a Pulligny Montrachet white, the terroir par excellence for great Burgundy whites," he explains.

With the Maison Louis Bouillotthe winery is planning to plant 6 hectares of vines to help young winegrowers who are just starting out and don't necessarily have a lot of land,

" For the past two years, all our vineyards have been converted to organic production. We're very proud to be able to put AB certification on all our labels in the near future," concludes Florian Cavelier.
